Prepare ingredients

  • Clean chicken by rubbing salt around to eliminate odors, then rinse with water, drain. Cut chicken into bite-sized pieces, set aside in a bowl.

  • Sweet potatoes, carrots peeled, washed, cut into bite-sized pieces.

  • Garlic, red onion peeled, thinly sliced.

Marinate the chicken

  • Place chicken in a large bowl. Add 2 teaspoons of seasoning, 3 teaspoons of curry powder, 2 teaspoons of lemongrass powder, 2 teaspoons of ground chili, stir well. Marinate the chicken for 30 minutes so that the chicken infuses the spices evenly.

Cook chicken curry

  • Put a large pot on the stove, saute minced onion and garlic, then add the chicken and stir fry until the chicken is tender.

  • Next, pour 1 liter of water with 200ml of coconut milk and start stewing the chicken on medium heat. When the water boils, skim often to make the curry liquid clearer.

  • Stew for about 10 minutes, then add sweet potatoes, potatoes, carrots and continue to stew for 45 minutes. When the vegetables start to cook, reduce the heat to low. Dissolve some tapioca starch in the curry pot to thicken the broth.

  • If you like spicy food, you can add a sufficient amount of chili powder according to your taste.
