INSTRUCTIONS:

  • Use a little salt to rub the surface of the duck, then rinse several times with water. To remove the fishy smell of duck meat, mix white wine with a little crushed ginger and rub it on the surface of duck meat, then rinse with water again. After drying the duck meat, cut it into bite-sized pieces.

  • Scrape the crocodile skin, wash it with water, and cut a few lines on the surface of the crocodile.

  • Clean and wash taro thoroughly with water, cut into 2 or 4 pieces depending on the size of the tubers.

  • Onion, garlic, ginger peeled, smashed, chopped.

  • Lemongrass removes the outer skin, wash, smash and slice thinly.

  • Sawleaf picked, washed, finely chopped.

Marinate duck meat

  • Put duck meat in a large bowl, marinate 2 teaspoons of complete seasoning for braising meat, ½  teaspoon of salt, ginger, onion, lemongrass, minced garlic and mix well. Marinate the duck for 10 minutes to let the flavors infuse before cooking.

Braise duck

  • Place a large pot on the stove, add 2 teaspoons of cooking oil. When the oil is hot, add the remaining minced onions, garlic, and lemongrass to the pot and fry until fragrant. 

  • Next, add duck meat and sauté for 10 minutes until the meat is firm.

  • Then, put the crocodile and taro into the pot, pour about 1 liter of water to braise the duck. When the water boils, reduce the heat to low until the duck is tender. 

  • At the same time, taste the seasoning, add 1 teaspoon of pork seasoning powder to make the braised water high-seasoned.
