Ingredients for 4 - 5 people

  • Cake sugar water

  • 80g cake flour

  • 70g bread flour

  • 10 grams of fat

  • 45g sugar fat

  • 55g pumpkin seeds

  • 50g sesame

  • 65g pumpkin jam

  • 80g sausage

  • 70g cashews

  • 70g lotus seed jam

  • Grated orange peel

  • 5 lemon leaves

  • 20ml cinnamon apricot wine

  • 3 teaspoons oyster sauce

  • 14g cake dough

  • 1 teaspoon unsweetened milk

  • 10ml cooking oil

  • Sesame oil

  • Five spice blend

  • Chicken eggs: 2 eggs

Instructions:

Make the crust

  • Mix 10ml of cooking oil with 100g of baking sugar, add ½ teaspoon of five spice blend, and ⅔ egg yolk. Mix well until the ingredients are evenly combined.

  • Sift 80g cake flour and 70g bread flour through a sieve filter, mix 10 grams of fat into the flour mixture.

  • Make a small groove in the middle of the flour mixture, slowly pour in the cake sugar mixture, and mix well.

  • Then, use your hands to knead the dough mixture to form a uniform mass, avoid kneading the dough for too long. After kneading, cover with cling film and let the dough rest for 45-60 minutes.

Make cake fillings

  • Mix the ingredients: melon seeds, pumpkin seeds, sesame seeds, pumpkin jam, sausages (steamed), cashews, lotus seed jam, lemon leaves (chopped).

  • Make a mixture of orange peel with finely grated gold, 20ml of cinnamon apricot wine, 2ml of filtered water, ½ teaspoon of five spices. Mix the mixture well and pour into the filling, add 3 teaspoons of sesame oil and 14g of glutinous rice flour and stir well.

  • Divide the filling into small pieces of 100g, the cake into a ball

Shape the cake

  • After the crust has had enough time to rest, divide the dough into 50g portions, roll into medium-thin pieces.

  • Put the cake in the middle, use your hands to squeeze the crust so that it covers the cake.

  • Put the cake into the mold, gently shape it, then turn the cake mold upside down, press it hard.

Bake the cake

  • Preheat the oven at 170 degrees Celsius and bake for 5-7 minutes.

  • In the meantime, make a mixture to brush the surface of the cake, including 1 egg, 1 teaspoon of fresh milk without sugar, 1 teaspoon of sesame oil and 1 teaspoon of cake sugar.

  • When the surface of the cake is moist, wait for 5-10 minutes, then use a brush to brush the mixture onto the cake crust a thin layer.

  • Continue to bake the cake at 170 degrees Celsius for 5-7 minutes, remove the cake from the oven and sweep the mixture like the first time.

  • Then, raise the temperature to 200 degrees Celsius and bake for 2-3 minutes to be able to take out the cake and enjoy.
