Ingredients For 4 - 5 people

Cake dough:

- 3 tablespoons of vegan butter

- 2 teaspoons yeast

-1 glass non-sugar fresh milk

- 1 tablespoon brown sugar

- 1/4 teaspoon of salt

- 3 cups all-purpose flour

- 1/2 teaspoon of organic matcha tea

Cake filling:

- 3 tablespoons of vegan butter

- 1/4 cup brown sugar

- 1 tablespoon cinnamon powder

Matcha Glaze:

- 1 cup of powdered sugar

- 1 teaspoon organic matcha tea

- 1 tablespoon non-sugar fresh milk

Instructions:

1 Combine 3 tablespoons of vegan butter and 1 cup of non-sugar fresh milk in a bowl. Proceed to heat the butter in the microwave at 350 degrees C for 30 - 60 seconds until the butter is melted. Let the butter and milk cool.
2 After the buttermilk mixture has cooled, pour it into a large bowl. Add 2 teaspoons of yeast to the bowl and wait for about 10 minutes. Then, stir in 1 tablespoon brown sugar, 1/4 teaspoon salt, and 1/2 teaspoon organic matcha tea.
3 Add the flour to the bowl. Pour only about 1/2 cup at a time and thoroughly mix. Repeat until all 3 cups of flour have been poured. Mix until the dough is smooth, thick, and cohesive.
4 Prepare a clean surface, sprinkle some flour on top to prevent sticking. Pour the dough over the top and knead for about 1 minute until the dough is smooth and doesn't stick to your hands. Cover the bowl of dough with cling film and let rise for about 1 hour or until the dough has doubled in size.
5 Roll the dough into a thin rectangle about 6mm flat on a surface that has been coated with flour. Melt 3 tablespoons of vegan butter and spread evenly over the top of the cake, coating the brown sugar and cinnamon powder mixture on top.
6 Roll up the dough. Cut off the two ends. Cut the cake into bite-sized pieces of about 5 cm. Arrange the cakes evenly on a baking tray that has been spread with a layer of butter.
7 Preheat oven to 175 degrees C (~350 degrees F). While waiting for the oven to heat up, prepare a bowl, add 1 cup of powdered sugar, 1 teaspoon of organic matcha tea, and 1 tablespoon of non-sugar milk, and stir until smooth mirror matcha is formed.
8 Bake for 25 - 30 minutes until lightly golden brown. Let the cake cool for a few minutes, pour the mirrored matcha coating on top, and enjoy immediately. Matcha cinnamon rolls can be stored for 2-3 days at room temperature.
