Boil the chicken

  • Soak chicken breasts in diluted saltwater for about 10 minutes. Drain the chicken breast after rinsing it several times with water.
  • In a pot, combine the chicken, 30g of crushed fresh ginger, 2 red onions, 1/2 teaspoon salt, and 2 lemon leaves. Boil chicken breasts for about 10 minutes over high heat.
  • When the water boils, reduce the heat to medium and boil the chicken breast for another 7 minutes, then turn off the heat.
  • Continue to cover the lid for about 15 minutes, then remove the chicken breast to cool.
  • Tear the chicken breast into bite-sized pieces. If you tear the chicken into too small pieces, it will become dry.

  • Finely chop 3 lemongrass branches, 5 garlic cloves, and 2 purple onions.
  • 3 lemon leaves cut into thin slices.
  • Prepare a large pan. Pour into the pan 100ml of chicken broth, 1 teaspoon of five spice blend, 1 tablespoon of ground chilli, 1 teaspoon of cashew powder, 1 tablespoon of fish sauce, 1 tablespoon of sugar, and stir well.
  • Add the lemongrass, garlic, minced shallot, and lime leaves to the spice mixture. Stirred.
  • Place the shredded chicken breast in a pan, turn on medium heat, and roast the chicken for 20–25 minutes. Use chopsticks to stir the spicy shredded chicken to dry it and not burn it.
