Ingredients for 4-5 people

  • 1 fish 1kg

  • 350g fried fish ball

  • 1kg rice noodles

  • 300g pineapple, 350g tomato, lemongrass, shallot, garlic, ginger, green onion

  • Salt, sugar, fish sauce, seasoning, red annatto powder, black pepper

  • Vegetables (optional)

Prepare ingredients

  • Wash fish with dilute salt water and lemon to remove the fishy smell. Filter fish bones, cut into bite-sized pieces. The head and fish bones are kept separate.

  • Shallot, garlic cleaned, chopped. Cut the top of the green onion separately, finely chop. The rest of the green onion is chopped. Thinly slice 3-4 grams of ginger. Lemongrass cut in half, smashed.

  • Use ¼ pineapple, cut into small pieces. Clean tomatoes, add areca.

  • Saute the shallot, set aside the onion oil.

  • The accompanying vegetables are cleaned, washed with dilute saltwater, and then drained.

Marinate fish bones

  • Put the blanched fish head and bones in boiling water with a little salt for 2 minutes to remove the smell.

  • Then, put the head and bones of the fish in a large pot of water with about 3l of water, add a few slices of ginger, grilled shallot and 2 smashed lemongrass plants into the stew. When the water boils, reduce the heat to low and skim frequently to keep the broth clear.

  • Stew fish bones with low heat for 45-50 minutes.

Marinate the fish

  • Marinate fish with 1 teaspoon minced scallions, 3g grated ginger, ½ teaspoon seasoning, ½ teaspoon sugar, ⅓ teaspoon ground pepper, 1 teaspoon fish sauce, 1 teaspoon oil saute onions and mix well.

  • Steam the marinated fish for 10 minutes over medium heat. Fried fish balls with medium heat, turn all sides to have a nice golden color.

Cook broth

  • Add minced onion and garlic and saute until fragrant, then add tomatoes and pineapple and stir well. Add 1 teaspoon of seasoning seeds, 1 teaspoon of sugar, and stir-fry to absorb the seasoning, then turn off the heat.

  • Dissolve red annatto powder with a little boiling water, until it turns red.

  • When the fish bones have had enough time to stew, take them out to separate, filter the broth. Seasoning for fish bone broth includes 1 teaspoon of salt, 2.5 teaspoons of seasoning, 2 teaspoons of sugar, 1.5 teaspoons of fish sauce, 1 teaspoon of the color of mixed red annatto powder. Stir until seasoning dissolves and season to taste.

  • Place all the sautéed tomatoes and pineapples in a saucepan, over medium heat.

Finish the dish

  • Put rice noodles in a bowl, arrange fish, fish balls, tomatoes, pineapple, add a little green onion, pour broth and enjoy.
