The production process of Jean Claude Mas Cabernet Sauvignon 14% is very meticulous: After separating the grapes from the stem, start fermentation at a temperature of 26 - 28°C and aeration twice a day. After that, begin aging with grape skins for 18 days at 25°C. And later, 20% of the wine is aged for 1 - 2 years using wooden barrels for four months, and the remaining 80% keeps aging in stainless steel tanks. The finished wine has a ruby red, slightly turning amber color. When enjoyed, the wine brings out the typical aroma of blackberry and blueberry with a pleasant light fruity wine, fine tannins, raspberry, fruity taste, and a transition to a long-lasting spicy aftertaste.
