Cardamom is a product with a strong scent and flavor of the mountains. In Vietnam, Cardamom is grown mainly in the mountains of Hoang Lien Son and in the Northwest highlands such as Lao Cai, Yen Bai, Ha Giang, and Lai Chau. In winter, ripe cardamom is harvested and brought to sun dry or Air dry to use as a spice or medicine. The spicy taste and aroma of cardamom comes from the essential oil in the seeds, so before adding to the dish, we should lightly pound the fruit to reveal the seeds, grilling or frying it into a little oil.

Dried Cardamom has a dark brown color, preserving the characteristic flavor and aroma of natural cardamom. The product has been removed from the water component, so it has a longer shelf life, just needing to store it at room temperature, in a cool, dry place.
